Dear Friends,
This time of year, we all tend to look forward to comfort food. Those foods are almost invariably high in carbs. Think mac and cheese, meatloaf and mash, noodle soup. Those yummy tummy fillers may push away the healthier fruits and veggies you need.
My lead article this week gives you a way to ensure you get the fruits and veggies you need to be healthy in the face of a carb onslaught.
Here’s another tip: If I feel my intake of fruits and veggies is too low, I’ll make a big pot of minestrone, one of my winter comfort foods. It’s a nutrient powerhouse, since it’s all vegetables and dried beans.
